The following notes should assist in understanding coffee, and to make your selection easier.
ROASTING:
What exactly does roasting do? The sugars, fats and starches that are within the bean are emulsified, caramelized and released. This creates the delicate coffee oil. This oil is what gives coffee its distinctive aroma and taste. Lighter roasts are sharper and more acidic than the darker roasts. Darker roasts have a fuller flavor. Beans that have been over-roasted will take on a burned, smoky or charcoal flavor. Also, there is less caffeine in the darker roasted coffees than in the lighter ones. The roast alone doesn't determine the resulting coffee taste or quality.
ACIDITY:
Coffee Acidity is the bright and dry taste that adds life to a coffee. Acidity is unmistakable in most Kenyan coffees and should be evident in any wet-processed coffees. Perceived acidity in coffee does not necessarily correlate to the pH of a coffee, but is believed to be the result of the acids present. The acidity of coffee is akin to the dry but bright sensation experienced on the back sides of your tongue while drinking a red wine.
ARABICA vs. ROBUSTA:
Two main species of coffee are cultivated today, these are the
Coffee Arabica (Arabica) and the Coffee Canephora (Robusta). Arabica coffee is also called the gourmet coffee because of its excellent perfect taste and it accounts to almost 80% of the world's production. On the other hand Robusta, compared to Arabica, is higher in caffeine content and inferior in taste. Robusta has found its market in commercial brewing companies where it is commonly used.

A mild and smooth flavored coffee. It provides a light bodied and
smooth tasting brew with a fruity aroma.
Grown in Central/South America. A mild acidity and fruity aroma.
Has an excellent medium body and balance with a smooth flavor.
From the island of Sulawesi grown at very high altitudes in the
southwestern Pacific in the Indonesian region. A spicy rare coffee
with low acidity and a deep complex aroma. Among the finest in the
world.
Grown in South America. Has a mellow acidity with rich aroma
combined with a full body, nutty caramel aftertaste, and rich
satisfying flavor.
Grown in the rich volcanic soil and mild, high-altitude climate of
Costa Rica. Tangy, mild but has a clean snappy and silky flavor
like a burgundy wine.
Kenya's reputation as a top quality coffee producer is unsurpassed. This
meticulously prepared East African coffee is famous for its rich full body,
strong pleasant acidity, floral fragrant aroma and a winey aftertaste with
overtones of berries and citrus.

Hawaiian Kona Blend Coffee. Kona is a very flavorful,
full-bodied coffee with a mellow character. Kona coffee is grown on the slopes
of an active volcano. The coffee is grown at 1500-2000 ft. This is a blend of
Kona and Colombian coffees.
Plumas has a slightly sharp and delicate acidity with a sweet, honey and roasted
almonds with milk chocolate flavor. High-grown (above 4000') coffee from the
Oaxaca region of southern Mexico. Its sweetness makes it an ideal dessert
coffee.
This is a wonderful blend of two well recognize coffees: sharp, fruity Mocha
beans with the rich, deep toned body of Java to create the perfect marriage of
flavors.
Grown in the perfect combination of soil and environment. Because of the high
altitudes of the Panamanian highlands, the beans are very dense and uniform and
they are mild with a medium body, good aroma and high acidity.

Guinea and acquired a new name. It has many unique flavors of Jamaican coffee
with the new twist of sweet acidic flavor with a clean medium to full body, with

Grown at the highest points in the Southwestern mountains of Puerto Rico at
elevations over 3,000 feet. It has a rich full bodied - creamy buttery flavor,
chocolate undertones and a floral aroma.
This rare Indonesian coffee is delightfully smooth with a rich heavy body, low
acidity and an exotic flavor with an intense syrupy aftertaste and an earthy
richness.
Grown on the slopes of Mount Kilimanjaro, Africa. This coffee is wonderfully
acidic coffee with an intense tangy flavor, rich body and a very fragrant and
